Amber yellow colour with hints of dried fruit, dried fig, apricot and spices with a soft and full-bodied taste with a very persistent lingering.

Soil type: Clay-loam rich in rock fragments

Planting density: 5000 vines/ha.

Training system: Overturned Tuscany

Harvesting period: Harvest takes place the first week of September

Harvesting method: Accurate selection of the grapes, manual harvesting in small baskets first fortnight of September.

Pressing: Soft hand pressed.

Drying:  Natural and slow drying of the grapes on nets until the end of December. 

Fermentation and ageing: Fermentation in barrels “Caratelli” of 50 or 100 liters assembled with different woods: chestnut, oak, cherry, acacia, mulberry, where it remains for at least five years; refining in bottle for at least six – eight months

Longevity: Great ageing potential, long life
