Bianco dell’Empolese DOC
VARIETY: San Colombano, Trebbiano Toscano, Malvasia bianca.
EXPOSURE: south
SOIL TYPE: clay-loam rich in rock fragments
PLANTING DENSITY: 3200 vines/ha.
CULTIVATION SYSTEM: Tuscan overturned
HARVEST PERIOD: accurate selection of the grapes, manual harvesting in small baskets first fortnight of September
HARVEST METHOD: Manual harvesting
PRESSING: soft pressing and de-stalking.
FERMENTATION AND AGING: Slow withering of the grapes on mats up until the end of January. Fermentation in barrels of 50 or 100 liters assembled with different woods: chestnut, oak, cherry, acacia, mulberry, where it remains for at least five years; refining in bottle for at least six/eight months
WINE-TASTING NOTES: amber yellow colour with hints of dried fruit, dried fig, apricot and spices with a soft and full-bodied taste with a very persistent lingering.
LONGEVITY: Potential of long aging.
